The best veggie sauté you will ever eat… I promise. Just did a little tweak to it and it’s delish! I made today into a mini prep day since it feels like Sunday. So top pic.. Boiling eggs in one pan and Purple and White fingerling potatoes with carrots in the other pan. Cut up red pepper, asparagus and zucchini while boiling. Once the potatoes and carrots are just SLIGHTLY soft drain the water, add some Extra Virgin Olive Oil, garlic, ginger and the remaining veggies. Sauté with the lid on for about 5 minutes. Just before veggies are done add a handful of fresh kale and sliced peperoncinis and some of the juice. This my friends is the key!!! It is just savory enough to make it a meal in an of itself! Make a big batch and eat it all week. That paired with shredded chicken in the crockpot and hard boiled eggs… And your week is set!
